1 red beet
1 golden beet
2 tablespoons of olive oil
1 sheet of puff pastry, thawed
1 egg + 1 teaspoon of water, beaten together
6 ounces of goat cheese
1/4 teaspoon of salt
1/4 teaspoon of pepper
3 tablespoons of honey
fresh basil leaves for garnish
Preheat your oven to a temperature of 425 degrees F. Slice greens off beets and scrub outsides. Rub down with olive oil then wrap them tightly in aluminum foil. Roast for about 1 hour, or until they become tender enough to slice. Unwrap beets and allow to cool until they become comfortable to the touch. Once cool, rub beets to remove skin, which should peel off easily.
Use a mandolin or a sharp knife to slice beets into 1/4-inch slices. Start with golden beets.
Place your thawed puff pastry on top of a baking sheet. Brush it off with beaten egg wash. Take about 4 ounces of goat cheese and spread it over the pastry evenly, then add sliced beets on top. Season with salt and pepper and crumble remaining goat cheese on top. Bake for about 25 minutes or until pastry becomes puffed and golden. Remove, then drizzle honey over the top. Garnish with a few basil leaves and serve immediately.
